Appetizer: Warmed Olives with Fresh Herbs
As we gear up for the holidays this week it is time to have a few dishes in your arsenal that are easy to prepare, can be ready in minutes, made ahead of time, and still impress your guests. This easy olive dish is exactly one of those dishes. Utilizing herbs that you will already have on hand for other recipes you will really just need to pick up a couple of varieties of olives.
Ingredients: (there are many variations to this recipe, I typically use these fresh herbs)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1t thyme leaves
- 1t chopped rosemary
- 1t crushed red pepper
- 1 pound brine-cured olives, such as Kalamata, Niçoise, cracked green Sicilian and Cerignola
Rinse the olives in cold water and dry them with a paper towel. Heat the oil in a pan and add the garlic. Cook the garlic 4-5 minutes until soft but not browned. Add in olives, herbs and crushed red pepper, tossing to coat the olives and just enough to warm them. Remove from heat and serve warm. You can make these ahead of time and reheat or just serve cold. They can be made 3 days ahead and kept in the refrigerator.
This is a simple appetizer that guests can casually nosh on with a glass of Manzanilla sherry while waiting on the stars of the show to come out of the kitchen!
