Avocado Toast With a Twist (and Sauvignon Blanc)
Avocado toast, if you have not heard, is all the rage right now. It makes for a quick and easy breakfast, lunch or just a little bite before hitting the gym. There are many variations on this new staple, and of course I'm not passing up on the opportunity to create my own version and share it with you here. Behold, a kicked up avocado on toast – one that's a great match for Sauvignon Blanc.
- 1 ripe avocado (remember how pit an avocado?)
- 1/2 of a chipotle pepper in adobo
- 2 good slices of bread or a brioche, toasted
- 1t olive oil
- 2 ounces of feta cheese
- 1/4 cup cream cheese
- 1T cilantro
Begin by mixing cream cheese, feta and cilantro until blended. Coat a small oven-safe dish with olive oil. Add the cheese mixture and broil on low until soft and lightly browned.
Using the back of a fork, give the avocado and chipotle peppers a rough mash in a separate bowl.
Remove the cheese from the oven and spread evenly onto the toast.
Top with a generous amount of the avocado and chipotle mixture to complete.
