Easy, Southern Holiday Hors d'oeuvre: Pimento Cheese
December can be a busy time — friends and family will be stopping by, so it's always good to have something available and ready to snack on at a moment's notice.
This simple recipe requires minimal effort and can be ready in just a few minutes, followed by a couple hours' rest in the fridge. Oh, and it's delicious. Of course, to complete the southern take on this classic you will need a box of Ritz crackers, but any cracker will do. There are many variations to pimento cheese, even the famous sandwich at The Masters. But I confirmed with mom that this is close to my grandmother's recipe, minus the cayenne pepper and hand-grated sharp cheddar cheese – both of which give the final result a little more bite!
- 2 cups sharp cheddar cheese, grated
- 8 ounces softened (room temperature) cream cheese
- 1 4-ounce jar pimentos, chopped
- 1/4 to 1/2 cup mayonnaise
- 1/4 teaspoon cayenne pepper
Fluff room-temperature cream cheese in a mixer. Mix in the cheddar cheese to incorporate. Once combined, mix in mayonnaise and pimentos, incorporating again. Cover and allow 2 hours to set up in the refrigerator.
It is totally acceptable to lick the beater at this stage.
Serve pimento cheese on ritz crackers or with celery sticks for dipping!
