Easy, Weeknight Salmon Paired with a Pinot

If there is one fish I enjoy catching and eating, it is salmon! This recipe is especially good because it requires minimal ingredients and can be ready in 30 minutes — which makes for a great weeknight meal. The only real prep-work for this meal is in making sure there is a bottle of Pinot Noir on hand.

Ingredients: (Dinner for 2)

  • 1 12 ounce piece of salmon — I like thinner filets of Coho, King or Sockeye
  • 1/2 a lemon, thinly sliced
  • 1T capers
  • Sea salt and fresh ground pepper
  • Several sprigs of fresh dill

Preheat oven to 250 degrees and lay fish (skin side down) on a piece of parchment paper. The paper makes for easy cleanup once the fish has finished cooking. Sprinkle salmon generously with salt and pepper, then arrange capers directly on the salmon, garnishing with dill and topping with the sliced lemon. Bake in the oven for about 20 minutes.

Remove from the oven and make this meal even healthier by simply adding some fresh arugula tossed in lemon juice and olive oil. This is absolutely my favorite meal to prepare after a long day – and its ease makes it great for when family and friends come over for dinner. Just don't forget the Pinot, the ultimate salmon-pairing wine.
