Perfect Pairing: Lamb Loin With Tzatziki and Red Bordeaux

Lamb loin chops are an easy go-to meal during the week – or they can be an elegant weekend meal with friends (who'll think you worked a lot harder on the dinner than you actually did). Plus, lamb is one of those meats that is a perfect pairing for red Bordeaux. But the best part is, you can put together this meal within 45 minutes — from start to table.

Ingredients for the lamb: (for two)

  • 4 lamb loin chops
  • 4 garlic cloves
  • Sea salt and fresh ground pepper
  • 3T each fresh rosemary and thyme
  • 2T olive oil

Ingredients for tzatziki:

  • 1/2 cup plain greek yogurt
  • 1/4 cup small diced cucumber
  • 2t minced mint leaves
  • Sprinkle of salt and pepper

Heat olive oil in a cast iron pan and add the garlic, blistering until browned 4-5 minutes. Sprinkle lamb with salt, pepper, and with the chopped rosemary and thyme, pressing the seasoning into the meat.

Place the seasoned lamb loins in the pan with the garlic and allow to sear and cook on each side until browned. This should take four minutes per side. While the lamb is cooking, mix yogurt with diced cucumber, mint leaves, salt and pepper. Transfer lamb from the pan to a plate. Serve the tzatziki on top of sliced cucumbers.
