Stuffed Heirloom Tomato Salad
After a long day at the office nothing beats coming home and enjoying a glass of fresh, lively red or white perfectly suited to summer weather. One thing to add to that relaxation is a healthy and satisfying meal that can be put together in a matter of minutes — besides, nothing screams seasonal summer more than fresh juicy tomatoes. Pulling out a few pantry staples, this main or salad side can easily come together in 15 minutes! Ready, set... Go!
- 3-4 heirloom tomatoes
- 1 cucumber, peeled and cut into a small dice
- 3 ounces feta cheese, crumbled
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 2 teaspoons fresh dill, divided
- Salt and pepper to taste
Simply core the center of the tomatoes using a paring knife. Sprinkle the inside of each tomato with salt. This will pull the juices from the tomato and into the well. Combine olive oil, red wine vinegar and a pinch of salt and pepper, whisking to combine.
Dice the tomato core and add to the cucumber, crumbled feta and dill. Pour the dressing over the diced ingredients and stir to combine.
Scoop the diced salad filling each of the cored tomatoes.
Top with additional dill.
Serve these individually as a light meal or as a side with grilled steak. Any leftover stuffing can be used in another tomato for lunch or simply tossed into a pita pocket for a sandwich.
