The Ultimate Leftover Turkey Sandwich
With the holidays upon us there are undoubtedly leftovers. Of course, these can get boring. Instead of throwing turkey between two pieces of white bread with some leftover cranberry, I like to transform that bird into something that feels like anything but a leftover. The addition of brie with this sandwich also allows for you to enjoy a glass of sparkling wine to make this mean everything but a leftover!
- Slices of thick sourdough bread, toasted
- Slices of roasted turkey
- Sliced green apple (think Granny Smith)
- 1 triangle of quality brie cheese (room temperature)
- Stone-ground mustard
- Fresh arugula
Toasting the sourdough on each side under a broiler creates a beautiful crust on the edges but leaves the center lightly toasted and soft. Add turkey and place thick slices of soft brie to cover. Return to the oven and broil until melted and bubbly. Slather stone-ground mustard on the other slice of bread, then add the apple and arugula on top of the cheese. Press together and sprinkle with salt and pepper before slicing.
I don't know about you, but a sandwich like this like this actually gets me excited to use up those holiday leftovers.
